Ingredients
  1. 1 cup dates
  2. ½ cup water
  3. 1 teaspoon baking soda
  4. 50g Butter
  5. 2/3 cup brown sugar
  6. 1 teaspoon vanilla extract
  7. 1 egg
  8. 2 bananas
  9. 1 carrot
  10. 1 cup chopped walnuts
  11. 1 ½ cups wholemeal flour
  12. ½ cup oat bran
  13. 1 teaspoon baking powder
Instructions
  1. Preheat oven to 180c and lightly grease and line tray.
  2. Place dates and water in a small saucepan and boil for about 3 minutes and stir frequently. Add baking soda and mix well.
  3. Beat butter with brown sugar and vanilla extract until thick, light and creamy, then beat in egg. Mix in mashed banana, grated carrot, nuts and date mash.s
  4. Stir flour, oat bran and baking powder together. Add to wet mixture and fold the two mixtures together with a large metal spoon, until well combined. Do not over mix.
  5. Spoon batter into lined tray.
  6. Bake for 20 minutes.
