Here’s a family fave recipe worth a whirl.
Gluten-Free Pikelets
Ingredients:
1 Cup Rice Flour
½ Cup Coconut Flour
½ Cup Chana (chickpea) Flour
2 Teaspoons Baking Powder
Two Shakes of Salt
2.5 Cups Milk
¾ Cup Chelsea Organic Coconut Sugar
2 Eggs
Instructions: Sift the dry ingredients into a bowl. In a separate bowl beat the eggs, milk and Organic Coconut Sugar (until blended smoothly). Then blend both lots of ingredients together. To cook, melt generous amounts of coconut oil in a frypan. Then pour about a tablespoon of mixture (per pikelet) into the pan. Wait until each pikelet bubbles in the middle and then turn them over. Cook until lightly brown. Then devour!
I topped mine with plain yoghurt and fruit. While, my kids love adding maple syrup too.
The kids loved this pikelet feast – paired with yoghurt, coconut chips, berries, bananas, maple syrup and a whole lot-a-love! Oh and edible flowers on the plate – just because they are growing in the garden at the mo.
